Creamy Mushroom Pasta with Croutons

Makes: 6 cups

Ingredients:

1 tbsp olive oil
4 cups sliced mixed mushrooms (such as cremini, oyster and shiitake)
2 shallots, minced
2 cloves garlic, minced
1 tbsp chopped fresh thyme
1/2 tsp salt
1/4 tsp freshly ground pepper
12 oz (340 g) spaghetti
1 cup 35% whipping cream
2 cups Rothbury Farms Buttery Garlic Croutons, lightly crushed
1/3 cup grated Parmesan cheese
1 tbsp chopped fresh parsley

Directions:

In skillet, heat olive oil over medium-high heat

Sauté mushrooms, shallots, garlic, thyme, salt and pepper for 7 to 10 minutes or until liquid is evaporated and mushrooms are golden

Meanwhile, cook spaghetti according to package directions

(NOTE: when you drain the pasta after it’s cooked, reserve 3/4 cup of the pasta water)

Add cream to mushroom mixture and bring to boil

Boil for 2 minutes or until slightly thickened

Add pasta and reserved pasta water to skillet and toss to coat

Add crushed croutons (saving some aside as a garnish) and parmesan and toss until combined
Sprinkle with remaining croutons and parsley before serving
