Organic Black Bean & Green Chile Bites

Ingredients:
1 can organic black beans, drained and rinsed
1 small can organic green chiles
1/2 cup red onion, diced
2 tablespoons cilantro, chopped
1 tablespoon garlic, chopped
1 teaspoon cumin
2 teaspoons Dijon mustard
2 tablespoons mayonnaise
1 bag Rothbury Farms Organic Seasoned Croutons, crushed

Garnish (optional):
3 ounces sour cream
1 tablespoon Adobo sauce
(Mix thoroughly)
1 lime, cut into wedges

Directions:
Preheat oven to 400˚F.

In a large mixing bowl combine the first 8 ingredients and ½ cup of the crushed croutons.

Mix thoroughly, crushing some of the black beans but not all.

Separate into 2 oz. portions (about 1 tablespoon each) and form into small patties.

Lightly toss the patties in the remaining crushed croutons to coat.

Place patties on an ungreased baking sheet and bake for 10-12 minutes or until lightly golden brown.

Garnish if desired.

Enjoy!

Note: Can be made ahead of time and frozen. To heat, bake on an ungreased baking tray for 15-18 minutes in a 375°F preheated oven.
