Parmesan Romano Panzanella Salad

Ingredients:
1 package Rothbury Farms® Parmesan Romano French Bread Croutons
1/4 cup olive oil
2 large tomatoes, diced
1 cup red onion, thinly sliced
1-1/2 cups cucumber, seeds removed, diced
1 cup pepper, diced (Anaheim, bell, etc.)
2 tablespoons flat leaf parsley, chopped
2 tablespoons chives, chopped
1 tablespoon thyme, chopped
1/3 cup red wine vinaigrette
Green onion, thinly sliced (for garnish)

Directions:
Preheat oven to 350˚F.

Toss croutons and olive oil together in a mixing bowl and spread in a single layer on baking tray lined with foil.

Bake at 350ºF for 8 minutes; remove and let cool.

In a large mixing bowl combine tomatoes, onions, cucumber, peppers and herbs.

Add croutons and vinaigrette to the mixing bowl and mix until well combined.

Cover and place in the refrigerator for 1 hour.

Remove from refrigerator and lightly remix.

Place into a serving dish and garnish with green onions.

Serve with grilled chicken, grilled shrimp, or shellfish.
