Shave Asparagus Salad

Ingredients:

Rothbury Farms® Buttery Garlic Croutons

12 large asparagus spears, trimmed

1/4 cup Asiago cheese, shaved

1/4 cup Italian dressing

Freshly ground black pepper

Lemon wedge, for garnish (optional)

 

Directions:

Working with 1 asparagus spear at a time, use a vegetable peeler to shave the spears into long, thin shavings. Transfer to a medium bowl (the tips will snap off as spears get thinner; add to bowl). Add Asiago and half of the dressing and toss to coat. Add more dressing and season with black pepper, if desired. Plate salad and top generously with Rothbury Farms® Buttery Garlic Croutons. Garnish with lemon wedges, if desired.
