White Cheddar Tomato Bisque

Ingredients:
8 ounces bacon
½ large onion, diced
3 ounces tomato paste
2 tablespoons garlic, chopped
28 ounces canned tomato, diced
Bay leaf
1 pouch Rothbury Farms® White Cheddar Croutons (set some aside as a garnish)
Black pepper

Directions:
In a medium saucepan, render bacon until crisp

Remove bacon and set aside, leaving the fat in the pan

Add diced onion and pepper (if desired) to the pan and sauté until tender (about 5 minutes)

Add tomato paste

Continue to cook for 5 minutes

Add garlic, canned tomatoes, and bay leaf to the pot and let simmer for 10 minutes

Add croutons and continue to simmer for 5 more minutes

Transfer mix to a blender and puree until smooth (work carefully in small batches blending to a smooth consistency)

Combine all blended batches together and season

Garnish with croutons and enjoy!
